With a career spanning over 15 years, I have dedicated my life to the art of baking and pizza-making. Since 2007, I’ve honed my skills in a variety of environments, from traditional bakeries to Neapolitan pizzerias, half-meter pizza establishments, and classic pizzerias. Each experience has deepened my understanding of the craft, shaping my expertise in both baking and the diverse styles of Italian pizza. Growing up in a southern Italian household where simplicity and tradition were deeply valued, I developed a lifelong appreciation for the beauty of authentic, time-honored techniques. This upbringing laid the foundation for my passion for respecting tradition while striving for perfection in every product I create. Whether kneading dough for artisan bread or perfecting a pizza base, I believe in the power of simple, quality ingredients combined with authentic methods. My name is Gaetano, and I’m 32 years old, proudly hailing from the beautiful region of Puglia. Ever since I can remember, pizza has been more than just a favorite food—it’s been a true obsession. What started as a childhood love grew into something much bigger, shaping not only my taste buds but my entire life. In 2012, I decided to turn my passion into my profession and began my journey as a pizzaiolo. It wasn’t just about making pizza; it was about perfecting an art form. In 2014, I took a bold step and moved to London, where I immersed myself in different styles of pizza-making. This experience broadened my horizons, teaching me new techniques and inspiring me to experiment while staying true to the roots of Italian pizza-making. Beyond crafting pizzas, I have a strong interest in studying “panificazione” (bread making). Understanding the scientific processes behind dough fermentation, baking, and how these elements interact with the human body is something I deeply value. This knowledge not only helps me refine my craft but also allows me to create food that is both delicious and mindful of its impact on those who enjoy it. For me, being a pizzaiolo isn’t just a job; it’s who I am. Each day, I strive to honor the tradition of pizza-making while embracing innovation that makes my creations uniquely my own.
